Morning Glory is a local vegetable in South East Asia. We use the veggies in many recipes, from stir-fry, soup to curry. In Thailand there are mainly 2 types of Morning Glory and today we are introducing you to the local one, that we called Thai Morning Glory. It’s less leaves and more crunchy stems. In this menu we stir-fry it with shrimp paste and not too juicy, this is the Southern Thai style. In Southern Thai food we add shrimp paste in many dishes. It adds umami flavour to the dish. Shrimp paste makes Southern Thai food have its own unique taste.

Ingredients
200g Thai Morning Glory
1 Tbsp Shrimp paste
1 Tsp Sugar
1 Tbsp Red Jinda Chili
3 Tbsp Garlic, roughly pound
3 Small head Shallots
2 Tbsp Stir-frying oil
½ C. Water

Directions

1. Clean the Morning Glory and chop it into 2 inches long and set aside.

2. Roughly pound garlic into a mortar and set aside.

3. Roughly slice shallots and Jinda chili and set aside.

4. Place a pan over high heat, and add stir-frying oil. When the oil is hot, add garlic and shallots and stir-fry until fragrance.

5. Add Jinda chili and stir for a few seconds before adding shrimp paste. After you add shrimp paste you can use the spatula to spread the shrimp paste into small pieces and consistently stir together with the rest of the ingredients in the pan.

6. Season the dish with sugar, and add water and Morning Glory. Stir-fry consistently until all of the water evaporates. Serve hot with steamed Jasmine rice and enjoy.
