Winter and those cold, dark days ahead, are made all the better with comfort food. I can't imagine the season without my favorite foods, among them my Mexican-inspired chicken chili. This isn't your average chili recipe. It uses a blend of chile powders and spices to achieve a rich, earthy flavor. And it features roasted peppers, including jalapeños for their warming heat.

When it comes times to serve the chile to family and friends, I set up a chili toppings bar. Here everyone can customize their own bowl of chili. Sour cream, shredded cheese, cilantro, avocado, and lime, among other toppings, are all up for grabs. And by all means, if you like your chili hotter, feel free to sprinkle on some hot sauce. I personally love mine with Tapatio, which is incredibly difficult to find here in Europe.
