The Louisiana Purple Pole Bean crop has been good and I now need to can some of the beans that I have harvested. I am going to can today using a raw pack method. String beans can well and doing so allows storage of vegetables that doesn’t take up freezer space. Louisiana purple pole beans contain acanthocyanins, which are antioxidants that give tremendous health benefits. Acanthocyanins are found in red, blue, and purple fruit and vegetables, including blue berries. Unfortunately, cooking rids the acanthocyanins in the beans and for this reason I often eat them raw on salads to get the benefit of the antioxidants. Enjoy the video!
