Hey Chile-Heads! Today, we are making some CLASSIC Frito Pies! It's thought that the true Frito Pie originated in the 1960's with Teresa Hernández; she worked at the Woolworths Lunch Counter in Santa Fe, New Mexico. Her Frito Pie had homemade red chile con carne, cheddar cheese and onions; it was served straight in the bag! Over the years, New Mexicans have added frijoles and other yummy toppings. For this recipe, we use ground turkey -- but this recipe is extremely versatile! These Frito Pies are so quick & easy, you're gonna love them!

Frito Pies with Ground Turkey

Ingredients:
½ pound ground turkey
2 tbsp canola oil
2 tbsp unbleached flour
3 tbsp hot red chile powder
1 ½ cups water
1 tsp salt
2 cups cooked pinto beans
Toppings: cheese, shredded lettuce, diced tomato & diced onion

Directions:
1. Heat 2 tbsp canola oil in a medium sized saucepan.
2. Add 1/2 lb turkey to pan.Cook turkey until slightly browned.
3. Add 2 tbsp flour to meat. Cook on medium heat for about 1 minute
4. Add 3 tbsp red chile powder. Cook for another minute, stirring continuously.
5. Slowly pour in 1 1/2 cups water, stirring constantly until completely combined.
6. After chile has thickened slightly, add 2 cups cooked pinto beans.
7. Add 1 tsp salt.
8. Cook for 15 minutes to allow the flavors to blend & the chile to fully thicken.
9. Now it is time to assemble! Put some fritos in a bowl and top with plenty of chile.
10. Add your toppings: shredded cheese, shredded lettuce, diced tomato & diced onion. Enjoy!
