Ingredients:

Marinade:

2 tbs olive oil
1/2 tbs sweet ground paprika
1/2 tbs smoked paprika
2 tsp dried oregano
salt and ground black pepper to taste

Paella:

2 lbs skinless, boneless chicken thighs, cut into 2 inch pieces
2 tbs olive oil, divided
3 cloves garlic, minced
1 tsp crushed red pepper flakes
2 C uncooked short-grain white rice
1 pinch saffron threads
1 large bay leaf
1/2 bunch Italian flat leaf parsley, chopped
1 quart chicken stock
1 medium lemon, zested
2 tbs olive oil
1medium Spanish onion, chopped
1medium red bell pepper, coarsely chopped
1 lb scallops, rinsed and patted dry
1 lb chorizo sausage, casings removed and crumbled
