Ingredients (Serves 4)
Chicken
• Chicken pieces (bone-in or boneless) — 1 kg | 35 oz
• Salt — 1 tsp | 5 g
• Black pepper — ½ tsp | 1.5 g
• Lemon juice — 2 tbsp | 30 ml | ⅛ UK cup | ⅛ US cup
• Oil (for grilling or searing) — 2 tbsp | 30 ml | ⅛ UK cup | ⅛ US cup
Coconut Curry Sauce
• Oil — 2 tbsp | 30 ml | ⅛ UK cup | ⅛ US cup
• Onion, finely chopped — 1 large (200 g | 1½ UK cups | 1½ US cups)
• Garlic, minced — 4 cloves (12 g | 4 tsp)
• Ginger, minced — 1 tbsp (15 g | 3 tsp)
• Ground cumin — 1 tsp | 2 g
• Ground coriander — 2 tsp | 4 g
• Turmeric — ½ tsp | 1 g
• Mild chilli powder or paprika — 1 tsp | 2 g
• Fresh tomatoes, chopped or canned — 250 g | 1¼ UK cups | 1¼ US cups
• Coconut milk — 400 ml | 1⅔ UK cups | 1¾ US cups
• Water (as needed) — 60 ml | ¼ UK cup | ¼ US cup
• Salt — ¾ tsp | 4 g (to taste)
• Fresh coriander (cilantro), chopped — 2 tbsp
