Ingredients
For the Meatballs:
• 450g (1 lb) ground beef (10–15% fat)
• 55g (½ US cup / ½ UK cup) fresh breadcrumbs
• 60ml (4 tbsp / ¼ US cup / 4 UK tbsp) milk
• 1 large egg, lightly beaten
• 40g (¼ US cup / ¼ UK cup) finely chopped onion (softened before mixing, optional)
• 1 tsp dried parsley (or 2 tsp fresh)
• 1 tsp dried oregano
• ½ tsp salt
• ¼ tsp black pepper
For Cooking:
• 30ml (2 tbsp / 2 UK tbsp) olive oil or light cooking oil
For the Mushroom Gravy:
• 450g (1 lb) cremini or chestnut mushrooms, sliced
• 28g (2 tbsp / 2 UK tbsp) unsalted butter
• 20g (2 tbsp / 2 UK tbsp) all-purpose flour (plain flour)
• 60ml (4 tbsp / ¼ US cup / 4 UK tbsp) brandy (or good-quality cognac)
• 400ml (1 ⅔ US cups / 1 ⅔ UK cups) low-sodium beef broth/stock
• 120ml (½ US cup / ½ UK cup) heavy cream (double cream)
• 1 tsp Worcestershire sauce
• ½ tsp dried thyme or 1 tsp fresh thyme leaves
• 2 tbsp chopped fresh parsley (for garnish)
• Salt & black pepper to taste
