Try this Low Calorie mashed potato with Cauliflower .
It is very creamy and light . Our latest favourite replacement for potato mash!

Cauliflower mash with coconut milk

1 cauliflower
1 potato
1/3 cup unsweetened coconut milk
3 Tbsp coconut oil
3 tbsp dry chives or 1/3 cup fresh and chopped
3 cloves of garlic
parsley
salt and pepper by taste

-Cut one cauliflower in smaller pieces and steam until cooked
-peel and cut one potato into small cubes and cook in a salty water
-chop garlic and chives
in a smaller pan sauté garlic, chives and coconut oil for a few minutes
-make sure you don't burn the garlic
using blender combine cauliflower, garlic mix and some coconut milk until mashed together ( add coconut milk slowly as you might need less)
transfer to the pot
-add cooked potato, salt, pepper parsley and mash with a potato masher
-add more milk if too thick
-serve as a low calory side dish with meat or stew
