Stuffed Mushrooms
This is one of my favourite ways to eat mushrooms. And, it packs in soo much flavour that you'll never get tired of eating these mushrooms. Let's make this.

Serves 2
1 packet button mushrooms
1 onion, finely chopped
1/2 capsicum, finely chopped
1 tbsp oregano
1 tbsp chilli flakes
Salt to taste
1/4 tsp pepper
1/4 cup processed cheese, grated
1/2 cup breadcrumbs
1 tbsp cornflour
1/2 cup water
1 tbsp oil
1 tbsp garlic, finely chopped
1-2 green chillies, finely chopped
Handful of coriander leaves, finely chopped
Salt to taste
Remove the stems of the mushroom & with a small scooper, scoop out as much excess flesh as possible without breaking the mushrooms. Add the mushrooms to boiling water & cook them for 4-5 minutes, strain & keep aside. Chop the stems of the mushroom finely & add in onion, capsicum, oregano, chilli flakes, salt, pepper, cheese & mix well. Stuff this in the mushrooms. Dip the mushrooms in breadcrumbs followed by cornflour slurry & then again in breadcrumbs. Fry/air fry the mushrooms till they're golden brown & crispy. You can serve the mushrooms with a dip or saute them with hot oil, garlic, green chilli, coriander & salt. Serve hot & dig in.!
