When my fried food craving sets in, this Creamy Crab Croquette is a great fix. Crispy exterior with a light creamy filling, croquettes are very versatile and relatively easy to make. Instead of crab, you could use ham, ground meat, octopus, corn, etc.

The base of the crab croquette is a thick béchamel sauce (butter, flour, milk), not potato or cheese. I’d always prepare a large batch and store the extras in the freezer. Simply cook them directly in hot oil and you’ll have a delicious treat in no time.

Ingredients:
45g butter
4 tbsp all-purpose flour
400ml milk (or more if needed)
200g lump crab meat
2 pieces crab stick - shredded
½ tsp salt and pepper
1 tsp garlic powder
½ tsp chicken powder

Crispy coating -
1 cup Japanese breadcrumb (or more if needed)
1 egg – beaten
2 tbsp flour
60ml milk
