Thanks for joining me today at the farmhouse. Today I'll be harvesting some of our first veggies from the garden and making a delicious coffee cake while we talk a bit about hard work and what it takes to reach our goals, whether it be homesteading, homemaking, new skills or simply sports with your kids!

RECIPE:
Grandma's Coffee Poke Cake:
1 box yellow cake mix (just the dry mix, unprepared)
3/4 cup oil
4 large eggs
1 cup sour cream

Filling:
1 cup brown sugar
2-3 tbsp cinnamon

Icing:
2-3 cups powdered sugar
2 tsp vanilla extract
1/8-1/4 cup milk (or just enough to thin the icing)

Directions: Mix the cake mix with the oil, sour cream and eggs until combined. In a well greased baking dish (9x13 works well) add half the batter and smooth it out. Top with the brown sugar and cinnamon and then carefully add the second half of the batter on top of the filling, spreading it completely over the top. Bake at 400 degrees for about 40 minutes. Remove from the oven and while cake is still hot, poke holes in the top and pour over your prepared glaze icing. Allow the cake to set and cool. Enjoy!
