How to make Heri Heri | Heri Heri, maar dan anders!

Heri heri is a traditional recipe in the Surinamese kitchen. It is a dish consisting of green bananas (plantain), cassava and salted fish. In nowadays kitchen some things have been added to the Heri Heri recipe. One of the additions are vegetables. Tayer leaf or long beans are now often served with it.

Many people add the boiled bananas, cassava and sweet potato separate from the cod fish. I prefer to add and mix them when the codfish is almost ready. This gives extra flavor to the vegetables.

Part 1 – Preparation Heri Heri

Ingredients:
1 fresh cassava
1 sweet potato
1 semi-ripe banana
1 green banana
salt

1. Bring salted water to boil in a large pot over medium-high heat.
2. Wash bananas, cut across the top of the banana and also the bottom but don’t go all the through. Cut lengthwise along the skin, like you are scoring the skin, and try not to cut into the flesh. Hold the banana with one hand while using the thumb the remove the skin from the white flesh. If the water isn’t boiling then place peeled bananas in a bowl with cold water.
3. Do same for the cassava and sweet potato. These two are tough to peel.


Deel 2 – Preparation for cod fish

400 cod fish
1 onion
2 garlic cloves
1 tomato
1 tsp tomato puree
1 tsp black pepper
fresh pepper
1 tbsp oil
a little water

Clean the cod and boil it for 15 minutes in plenty of water to desalt it. Then rinse and drain and shred it into small pieces. Heat 2 tbsp oil in a skillet and saute the onion, garlic and pepper. Add the sliced ​​tomatoes and tomato puree and cook for two minutes until tomatoes are soft. Add shredded cod fish and season with black pepper. Cook for about 10-15 minutes on low heat. When cod fish is almost ready, add the boiled cassava, bananas and sweet potato. Mix all together so that each piece is coated.

Serve hot!
