Marbled Tea Eggs is a popular Asian dish that can be eaten as a snack or side dish with virtually any Asian meal.. It's healthy, sweet & savory at the same time, super easy to make, and pretty to look at. Ideal for the mealpreppers out there (makes a dozen). Also, your kitchen will smell heavenly!

INGREDIENTS (makes 8-12):
• 8-12 eggs
• 2 tbsp loose tea leaves or 3 tea bags (any black tea is fine except for Earl Grey or fruity flavored tea)
• 40 ml dark soy sauce & 40 ml light soy sauce (or substitute with 80 ml (1/3 cup) of all-purpose soy sauce)
• 2 bay leaves
• 2 pcs rock sugar (or 2 tsp brown sugar)
• 1 stick Chinese (Cassia) cinnamon (or regular cinnamon stick if you can’t find the Chinese variant)
• 1 tsp Sichuan peppercorns
• 6 cloves
• 3 star anise pods
• 1 tsp salt
• water (just enough to submerge the eggs in the pot)

Simple version: Replace all the spices with 2 tsps of 5-spice powder.


PREPARATION:

1) Fill a large pot with water and let it come to a boil
2) Once water is boiling, carefully transfer the eggs in the boiling water and cook for 7 minutes
3) Transfer the eggs into an ice cold bath and let them cool off
4) Meanwhile, add all the other ingredients in the pot and add ca. 1 liter (4 cups) of water and bring to a boil
5) Crack the eggs with the back of a spoon by gently tapping on the eggshells
6) Once the mixture is boiling, lower the heat and transfer the cracked eggs into the mixture
7) Simmer for 30-60 min then turn off the heat
8) Let the eggs cool off in the mixture then continue marinating in the fridge overnight (the longer you let the eggs soak in the mixture, the more flavorful they’ll be)
These eggies can be eaten cold or warm. Your choice!
