Piadina is an Italian flatbread made with no yeast and extra virgin olive oil. Originally the recipe calls for lard, but I wanted to make things easy and accessible to everyone, vegetarian and vegan included. Just use simple ingredients like all-purpose flour, oil, water, and salt. It's going to be ready in half-hour and It can be cooked (preferably) in a cast iron pan. Piadina can be stuffed and folded or rolled to create awesome sandwiches.
I'm still amazed how this bread swells and bubbles without the use of yeast!
