Bitter gourd Onion fry Recipe| Karely Pyaz ki Recipe
Ingredients

800g Bitter gourd

1 onion (finely chopped)

2 tomatoes (finely chopped)

3 green chilies (sliced)

2 tablespoons yogurt

Fresh coriander (chopped, for garnish)

Salt (to taste)

1 teaspoon turmeric powder

1 teaspoon red chili powder

1 teaspoon cumin seeds

2 tablespoons cooking oil

Instructions

Prepare the Bitter Gourd:

Wash and slice the bitter gourd into thin rounds.

Sprinkle with a little salt and set aside for about 30 minutes to reduce bitterness. Rinse and pat dry.

Fry the Bitter Gourd:

Heat 1 tablespoon of oil in a pan.

Fry the bitter gourd slices until they are golden brown and crispy. Remove from the pan and set aside.

Make the Tarka (Tempering):

In the same pan, add the remaining 1 tablespoon of oil.

Add cumin seeds and let them sizzle.

Add finely chopped onion and sauté until golden brown.

Add the sliced green chilies and chopped tomatoes. Cook until the tomatoes are soft and the oil starts to separate.

Add turmeric powder, red chili powder, and salt to taste. Mix well.

Combine and Cook:

Add 2 tablespoons of yogurt to the tarka and stir well.

Add the fried bitter gourd slices to the mixture and combine everything thoroughly.

Let it cook on low heat for another 5-10 minutes to allow the flavors to meld.

Garnish and Serve:

Turn off the heat and garnish with freshly chopped coriander.

Serve hot with chapati or rice.
