SHRIMP FRIED RICE RECIPE

4 cups Jasmine rice (uncooked)
1 lb. shrimp (we had approximately 1.3 lbs)
1 stick butter
2 cloves of garlic (minced)
4 large eggs
1 small bag mixed veggies (corn, peas, carrots is best)
Sweet soy sauce (purchased at any Asian market)
*The following are used to taste/necessity
Soy Sauce
Sesame oil
Sesame seeds
Vegetable oil

Cook rice before preparing to fry on the griddle top (we recommend overnight cooling in the refrigerator on a cookie sheet - spread the rice out.)
Turn griddle to med/low heat. Lay down about 1 tbs. of vegetable oil and stick of butter. Place the rice on the butter and oil, and cook for several minutes, mixing from time-to-time. The rice will start to darken (slightly). Once the rice is all fried, Mix in sweet soy sauce (*For our cook, we had only 2 tbs of sweet soy sauce, so we mixed in both sweet and regular soy sauce). On an open area of the heated griddle, crack and cook the eggs. Once the eggs are cooked through, mix in with the rice. After cooking for an additional 2-3 minutes, move the rice to the cooler section of the griddle and place another 1/2 tbs. of vegetable oil on heated griddle, placing frozen veggies (or fresh) onto the oil. Mix with more sweet soy sauce, and a small amount of sesame oil. the vegetables are hot, move the vegetables to cooler side of griddle and mix in with the rice. *Because shrimp cooks quickly, it is the last part of the cook.

Place a small amount of oil onto the griddle, and the two cloves of minced garlic. Once the garlic begins to brown (after approx.. 30 seconds), lay the shrimp directly onto the garlic. Mix and cook until the shrimp is cooked through (the shrimp will turn a light pink color, approximately 4 minutes). Mix in soy sauce with the shrimp. Once cooked through, bring back all of the rice, eggs and vegetables and mix together with the shrimp. Serve and enjoy!
