In a city justly famous for its great pizza there was a paradigm shift starting in 2004 with the opening of Anthony Mangieri's Una Pizza Napoletana on 12th St. Natural leavened via slow fermentation, baked in a custom imported wood burning oven, these pies were a game changer.
In 2009 Roberto Caporuscio, trained in Napoli, opened Keste on Bleecker Street, a short half block down from the classic old school coal fired John's, and then we hit Joe's, the legendary slice joint around the corner on Carmine, and finally no knead baking savant Jim Lahey and his Co., in Chelsea.
