At this point I've made countless variations of mooncakes though I still can't ever decide on whether I enjoy baked traditional mooncakes or snow skin mooncakes.

Snow skin mooncakes are non-bake. They have such a unique texture and aesthetically they always come out super clean and detailed, giving you so much room for creativity.

Traditional mooncakes on the other hand do require baking. They are more of a pastry and possess a super flavourful crust. Additionally, they can be made much further in advance and in larger portions since they have a longer shelf life compared to snow skin mooncakes.

But why choose when you can have it all. So in this video I'll show you how to make the same flavour mooncake in both styles!

INGREDIENTS

Makes 12 (50 g) mooncakes

Coconut Filling:

1 large egg
50 g (3 tbsp) canned coconut milk
50 g (2 1/2 tbsp) sweetened condensed milk
30 g (1 1/2 tbsp) osmanthus sugar syrup (or honey)
30 g (2 tbsp) coconut oil (or unsalted butter)
100 g (1 cup + 2 tbsp) unsweetened desiccated coconut
20 g (2 1/2 tbsp) rice flour
5 g (2 1/2 tbsp) dried osmanthus flowers

Snow Skin:

Osmanthus tea:
1 1/2 tbsp dried osmanthus flowers
150 g (1/2 cup) milk

40 g (1/3 cup) glutinous rice flour
40 g (1/3 cup) rice flour
20 g (2 tbsp) cornstarch
45 g (1/2 cup) icing sugar
140 g (1/2 cup) osmanthus milk tea
20 g (1 tbsp) sweetened condensed milk
30 g (2 tbsp) coconut oil (or unsalted butter)
1/4 tsp matcha powder

Baked matcha crust:

180 g (1 1/2 cups) pastry flour or cake flour
90 g (1/3 cup) light maple syrup (or honey)
45 g (3 1/2 tbsp) flavourless oil
1 tsp matcha powder
Pinch of salt

40 克(1/3 杯)粘米粉
20 克(2 汤匙)玉米淀粉
45 克(1/2 杯)糖粉
140 克(1/2 杯)桂花奶茶
20 克(1 汤匙)炼乳
30 克(2 汤匙)椰子油(或无盐黄油)
1/4 茶匙抹茶粉

烘焙抹茶饼皮:

180 克(1 1/2 杯)低筋面粉或蛋糕面粉
90 克(1/3 杯)淡枫糖浆(或蜂蜜)
45 克(3 1/2 汤匙)无味食用油
1 茶匙 抹茶粉
少许盐
