Ingredients and Recipe

For Yakhni:

In a pressure cooker we will add 1 1/2 kg Mutton shanks, 1 teaspoon coriander seeds, 1 teaspoon fennel, 1/2 teaspoon black pepper corns, 2 bay leafs, 1 cinnamon stick, 1 medium onion, 1 garlic bulb and 1 piece of ginger.

We will cook this yakhni in pressure cooker for 20 minutes. After 20 minutes when Yakhni is ready, we will separate meat and yakhni.

Pulao:

In another pot we will add 200 gram ghee and 2 medium sliced onions. We will cook onions until golden brown. Then we will add 1 1/2 Tomatoes slices and 2 Tablespoon ginger / garlic paste. Then we will add 1 Teaspoon black pepper corns, 4 black cardamom, 6-7 green cardamom, 2 star anise, 8-10 cloves, 2 sticks cinnamon, 2 bay leafs, 1 1/2 Teaspoon black zeera.

We will cook this for a minutes and add 1 cup yogurt. Now we will add 4 Teaspoon salt or you can add according to your taste. Now we will add green chillies and after cooking it for 2-3 minutes, we will add mutton shanks that we cooked in yakhni. Then we will add 2 Tablespoon ginger slices and cook mutton with all the added spices.

After 2-3 Minutes we will add all the yakhni we made. We will let it boil and once it starts boiling we will add our 1 1/2 kg pre soaked basmati rice. After this we will wait until it starts to boil and then place a tawa below the pot and cook it on dum for 15-20 Minutes.

After 15-20 minutes your aromatic Mutton Yakhni Pulao is ready to be served and enjoyed.
