Serves: 4 🐟🐟🐟🐟

Ingredients
🥣Tartar Sauce
-1/4 cup (65g) plain Greek yogurt
-1/4 cup (65g) light Mayo
-2 tsp capers (or swap for finely chopped dill pickles)
-1 tbsp (15g)onion (finely chopped)
-1 tbsp (15g) fresh parsley (finely chopped)
-1/2 tbsp (7g) lemon juice
-1 tsp Dijon mustard
-1/2 tsp granulated sugar
-1/8 tsp salt
-1/8 tsp black pepper

🐟 Wrap
-1 1/3 lb (600g) snapper (or cod/tilapia for a lower calorie option, ⅓ lb fillets)
-1 egg
-3/4 cup (80g) breadcrumbs
-salt and pepper (to taste)
-olive oil cooking spray
-4 tortillas (low-carb)
-8 slices cheese (low-fat)
-8 tbsp tartar sauce

Instructions
🥣 Make The Tartar Sauce:
-Add all sauce ingredients to a bowl and mix until well combined.

🐟 Fish Filets:
-Prepare the fish: Divide the fish into four equal portions, 1/3 lb (151g) each.
-Whisk an egg in a shallow dish, combine and season breadcrumbs in another shallow dish.
-Dip each filet into the egg mixture then press into breadcrumbs.
-Lightly spray pan and cook the fish on medium heat 5-7 min per side or until golden brown and cooked through (internal temp of 145°F or 63°C).

🌯 Assemble and Grill Wraps:
-Add two slices of cheese down the center of each tortilla. Top the cheese with tartar sauce, then add the cooked fish filet.
-Fold the sides of the tortilla inward over the filling, then fold the tortilla in half.
-Grill the wraps 1-2 minutes per side, or until golden brown and crispy.
-Serve and enjoy!

🌾❌ Gluten-free:
-No changes needed for the tartar sauce ingredients.
-Use gluten-free breadcrumbs and tortillas.

🌱 Dairy-Free/Vegan:
-Replace Greek yogurt with plant-based yogurt.
-Use vegan mayo instead of light mayo.
-Replace fish with plant-based protein (e.g., tofu, tempeh, or seitan).
-Use a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoon water) instead of regular egg.
-Substitute low-fat cheese with vegan cheese or nutritional yeast.
