Although Pisco Punch's creation is usually credited to Professor Jerry Burns of the Bank Exchange Saloon in San Francisco it could actually date to mid 1800's Peru, where a similar drink was served aboard steamships stopping in Peru, Mexico and Puerto Vallarta on it's way to San Francisco. Those ships were also well known for not only transporting people but also, lemons, pineapples and Pisco, Peru's Brandy style Spirit. Nobody actually knows though, the creation of this drink is lost to time.

We do know however that it was Barkeeper Duncan Nicol who bought the bank exchange (along with it's house recipe) in 1893. It is Nicol we have to thank for building the reputation of this tipple and he made it so popular that he kept the recipe a secret, taking it to his grave.

The recipe we do here is Jim Mehhan's version which he adapted from David Wondrich who printed his recipe in his book imbibe (I've linked below, everyone should read it). Apparently Wondrich uncovered the recipe printed by one of Nicol's former bar manager's in the "California Historical Quarterly" fro 1973. Meehan writes that the appeal of the lost recipe was not only that Nicol's version was the most popular but also that it was rumored to contain a secret ingredient. That Secret ingredient according to author and Pisco producer Duggan McDonnel was most probably Gum Arabic which would have given it a silkier texture.
