Welcome Back to Cooking Tips & Household Hints !!! On our 10th Episode I will Prepare Y'all my Rendition of the Millers Cafeteria Eggplant Casserole !!! I Tweek it a Bit !!!
Original Recipe :
1 large eggplant
2 cups chicken broth
10¾-ounce can cream of mushroom soup
8-ounce package stuffing mix
3 tablespoons Parmesan cheese
1 small green pepper, chopped
½ cup diced onion
1 tablespoon butter
Olive oil
Salt and pepper, to taste
½ teaspoon crushed anise seed
1 to 1½ cups mixed shredded cheddar and mozzarella cheese
Peel and dice eggplant. Soak in saltwater 30 minutes.

Combine chicken broth and cream of mushroom soup. Add stuffing mix and Parmesan cheese. Stir until stuffing is moistened.

Sauté green pepper and onion in butter and 1 tablespoon olive oil. Remove pepper and onion from pan, and drain. Add 2 or more tablespoons olive oil to drippings in pan. Add eggplant. Sauté until tender. Season with salt, pepper and anise. Stir. Add to stuffing mixture.

Pour mixture into a buttered 9-by-13-by-2-inch baking dish. Top with cheese. Bake in a preheated 350-degree oven 30 to 45 minutes. Makes 8 to 10 servings.
