豉汁排骨鳳爪粉絲煲

材料:
排骨一磅(已切粒)
綠豆粉絲3兩
鳳爪(炸)6隻
洋蔥一個
豆豉適量
辣椒仔一隻(已切粒)
冰糖(大)一粒

處理:
1. 排骨,清水洗乾淨,擎乾水。
2. 鳳爪,放大碗內,加入大滾水,浸一分鐘,去除雪味及污漬,清水沖洗乾淨,擎乾水。
3. 加入調味料:
排骨 鳳爪
a. 蠔油 半湯匙 一湯匙
b. 生抽 半湯匙 一湯匙
c. 胡椒粉 適量 適量
d. 蒜蓉 半湯匙 一茶匙
e. 豆豉 適量 -
f. 生粉 一湯匙 -
g. 油 一茶匙 -
h. 老抽 - 一湯匙
撈勻所有調味料。
4. 預備好鑊及煲仔。

烹調:
1. 白鑊,放排骨,中慢火煎。
2. 洋蔥,一開四,放煲仔內。
3. 排骨,一面已煎至金黃色,反轉繼續煎。
4. 加入:
a. 蒜蓉一茶匙
b. 豆豉10粒
c. 辣椒粒少許
炒勻,加入大滾水蓋過面,大火滾起,中火燜10分鐘。
5. 粉絲,清水浸軟。
6. 排骨已燜了10分鐘,檢查一下可否用筷子穿過,加入鳳爪,燜3分鐘。
7. 粉絲,放煲仔內的洋蔥上。
8. 所有材料,放煲仔內,大火滾起。
9. 灑上芫荽碎及辣椒粒。
10. 完成,可享用。

Pork ribs claypot with chicken feet and mung bean vermicelli

Ingredients:
Pork ribs 1 lb (already been diced in cubes)
Mung bean vermicelli 3 taels
Chicken feet (deepfried) 6 Nos.
Onion 1 No.
Preserved beans appropriate amount
Chili 1 No. (already been diced in cubes)
Rock sugar 1 big cube

Preparation:
1. Pork ribs, rinse with tap water. Drain.
2. Chicken feet, put in a big bowl. Add in boiled-up water and soak for a minute, to remove unpleasant smells and dirts. Rinse thoroughly. Drain.
3. Add seasoning:

a. Oyster sauce 0.5 tbsp 1 tbsp
b. Light soya sauce 0.5 tbsp 1 tbsp
c. Pepper appropriate appropriate
amount amount
d. Garlic sauce 0.5 tbsp 1 tsp
e. Preserved beans appropriate -
amount
f. Tapioca starch 1 tbsp -
g. Oil 1 tsp -
h. Dark soya sauce - 1 tbsp
Mix all the seasoning well.
4. Get ready for wok and claypot.

Steps:
1. Plain wok, put pork in it. Fry at medium-low flame.
2. Onion, divide it into 4 shares. Put in the pot.
3. Pork ribs, one side has been fried into golden yellow, flip over and continue frying.
4. Add in:
a. Garlic sauce 1 tsp
b. Preserved beans 10 Nos.
c. Chili cubes little
Fry well. Add in boiled-up water just covering up the pork. Heat up at high flame. Turn to medium flame and braise for 10 minutes.
5. The vermicelli, soak in tap water until it turns soft.
6. The pork has been braised for 10 minutes, check if it can be pinched through with a pair of chopsticks. Add in chicken feet, braise for 3 minutes.
7. The vermicelli, put on top of the onion in the pot.
8. All the ingredients, put in the pot, heat up at high flame.
9. Put coriander and chili cubes on top.
10. Complete. Serve.

Starting from today, temperatures will be low. Cook some claypot dishes to make us warm.
