Mother's Day cake, a Charlotte with curd cheese mousse and berries,
simply delicious with coffee!

for the sponge cake :
8 eggs (separate)
200 gr. sugar
170 gr. flour
pinch of salt
1 pkg. ( 40 gr. ) vanilla pudding
50 gr. butter liquid
Vanilla flavouring
Lemon zest
jam to spread

Filling:
500 gr. curd cheese
250 gr. yoghurt
90 gr. icing sugar
300 ml. Whipped cream
Vanilla flavouring
juice of 1 lemon
7 sheets gelatine
berries to taste
possibly cake jelly

My name is Anni and I come from the beautiful Tyrol (Austria). As a trained cook, I worked in the gastronomy for many years and have never lost my passion for cooking and baking.
