Why didn't I try this easy Qatayef recipe before? Irresistible taste and so easy Ramadan sweet

Qatayef are Middle Eastern pancakes that are filled with white cheese or nuts then fried or baked, and soaked in a sugary syrup.
They are mainly made and served during the Holy month of Ramadan, but I will make them year around as they are so delicious and easy to make.
They are similar to pancake made from flour and samolina, yeast, milk sugar and sugar syrup. The dough is pored on non stick pan and fried from one. The end result is one side that is lace-like and the other is bubbly. Then you fill with Nuts or Cheese and folded to form half circle shape closed sandwich to fry.

Qatayef Ingredients:
2 cups flour
3/4 cup fine semolina
2 Tbsp sugar
1 Tbsp Starch
1/4 tsp yeast
1/2 cup warm milk
2 1/2 cups warm water

For Walnut Filling Ingredients:
2 cups rough chopped walnut
1 Tbsp Cinnamon
1 Tbsp sugar

For Cheese Filling Ingreddients:
(This amount will fill 5-6 Qatayef pieces )

1/2 cup unsalted cheese (easy recipe for unsalted homemade cheese) or ricotta cheese
1/2 cup mozzarella cheese

Sugar Syrup:
1 cup water
2 cups Sugar
1 tsp lemon juice
