LAMB AND RICE PREPARATION:
thinly slice 6 medium sweet or white onions, and reserve 1 handful for lamb broth. Deep fry the rest in cooking olive oil till golden brown and stet aside on a paper. Season with sprinkles of salt to taste.
Cure 3 lbs lamb with 6 cloves of grains of selim , 6 cloves, 3 star anise, 1/2 tsp dry rosemary, 2 dry bay leaves, 1/2 tsp peppercorns, 6 tbsp salt
Cook cured lamb for 30 minutes on medium heat with 1000 ml water, and a hand full of sliced onion
Strain cooked lamb and set the broth aside. Brown lamb in 2 ladles full onion infused oil over medium high heat until golden brown. Turn heat down to low and add 1/2 tsp meat masala, 1/2 tsp tandoori masala, 1/2 tsp half and half garlic and onion granules, 1/2 tsp crushed white pepper, 1 tsp curry powder, 1 tbsp green seasoning, stir and Cook for 2 additional minutes and remove lamb from spiced oil and set aside.
Add 2 cup washed basmati rice to spiced cured lamb infused oil and toast rice stirring constantly till dry and visibly toasty. Takes about 7 minutes .
Add 4 cups washed jasmine rice, and lamb broth, stir to combine and add 3 additional cups water. Taste and adjust seasoning. Add 4 woke habanero chilis. Cover with lid and cook on medium low for 30 minutes, then stir, moving top of rice to the bottom and vice versa. Reintroduce lamb on the top of the rice. Apply a parchment paper and lid,turn heat down to low, and cook for 30 to 35 minutes. This introduces air pockets and redistributes heat evenly, allowing the rice to cook with steam, which in turn, thoroughly cooks each rice grain to a fluffy softened texture.
Plate/serve by layering crispy fried onions between the rice.

OMELETTE PREPARATION:
6 whole eggs cracked into a mixing bowl, season to taste with salt and pepper, add a splash of water. Add a pinch of curry powder to 1 tbsp butter, and melt, then add to eggs. Add 1 tbsp of green seasoning, and Whisk to combine. Fry in batches and serve with the braised rice.

KELEWELE- Spiced plantain preparation:
6 ripened plantains peeled and cut into bite-size pieces
Season plantains with a pinch of salt to taste.
Add the following ingredients to the plantains - Two pinches of powdered cloves, 1/2 teaspoon of grated ginger root, 1/2 teaspoon crushed black pepper, 1/2 tsp chili flakes, Half tablespoon of granulated sugar, 1 tablespoon of flour.
Deep fry, spiced and seasoned plantains and onion infused oil derived from deep frying onions.
