Ingredients:
Serves 3 - 4 pax

Marinated pork belly
---------
Mix the ingredients here together and marinate the pork in the fridge for at least 30 mins.

300g of pork belly - cut into bite sizes
1 tablespoon of premium dark soy sauce
1 tablespoon of Chinese rice wine

Other ingredients
---------
Fry the ingredients below in sequence with the marinated pork. Add marinated pork once you see steam forming after you have added the Chinese white rice wine in

Some cooking oil
1 piece of cinnamon bark
2 pieces of star anise
10g of sliced young ginger
8 cloves of garlic
6 pieces of chopped shallots
150g of sweet preserved mustard (vegetables) mei cai 梅菜
1/2 cup of Chinese white rice wine (白米酒)
600ml of water
2 tablespoons of oyster sauce
1 tablespoon of light soy sauce
1 tablespoon of premium dark soy sauce
1 teaspoon of sugar
Some cornstarch solution
