這次做了兩個餡料. 紅豆跟奶油布丁餡. 紅豆稍微保持顆粒狀. 如果不想要顆粒可以多煮一次變爛一點. 紅豆用爐火煮的話, 大約一小時
I made two filings this time, Red bead paste and creamer paste. I kept the red bean with its form. Cook the bean longer if you prefer it more sandy like. Cooking the red bean over stove, simmer it for about 1 hour.

材料 Ingredients:
紅豆餡 Red Bean Paste
紅豆1包 Red Bean 1 Bag
白糖220克 Can Sugar 220g
麥芽糖75克 Maltose 75g
鹽適量 Salt a pinch

奶油布丁餡 Creamer:
奶油奶酪100克 Cream Cheese 100g
奶油20克 Butter 20g
牛奶250克 Milk 250g
雞蛋100克 Eggs 100g
糖40克 Sugar 40g
玉米粉30克 Corn Flour 30g

車輪餅 Wheel Cake Batter
雞蛋50克 Egg 50g
砂糖100克 Sugar 100g
牛奶110克 Milk 110g
泡打粉3克 Baking Powder 3g
玉米粉40克 Corn Flour 40g
低筋麵粉130克 Low Gluten Flour 130g
融化奶油30克 Melted Butter 30g

作法:
紅豆餡 Red Bean Paste
1. 紅豆洗淨, 瀝乾
Wash clean the red beans. Drain
2. 加入大量的水
Add lots of water
3. 電鍋先用兩杯量米杯的水煮過
Use two cups of water with rice measuring cup and cook
4. 之後再一次用兩杯量米杯水量煮
Cook first time, then cook second time with two cups of water again
5. 煮好後悶四個小時
Cover for 4 hours
6. 鍋裡放入白糖, 鹽跟麥芽糖. 加入約300克煮好的紅豆
In a pot, add sugar, salt and maltose. Add 300g cooked red beans
7. 用小火煮過. 煮出糖漿. 同時把紅豆稍微壓碎
Heat over low heat to caramelize. Crush some of the red beans
8. 我大概煮了20分鐘. 到有點濃稠. 冷卻之後會再濃稠一點
I cooked about 20 minutes until it is caramelized. The filing will form thicker once it is cool down

奶油布丁餡 Creamer
1. 鍋內加入奶油奶酪, 奶油跟牛奶
In another pot,. add cream cheese, butter and milk
2. 用小火煮到約85度C
Cook on low heat until it reaches 85C
3. 另一鍋內放入雞蛋跟糖
In a mixing pot, add egg and sugar
4. 加入玉米粉, 混合攪拌
Add corn flour and mix well
5. 混合到沒有顆粒. 慢慢加入牛奶混合液. 繼續混合均勻
Well mix, slowly adding the milk mixture and mix well too
6. 隔水加熱, 滾水後開中火. 放上混合液在熱水讓攪拌
Double boilers and continue beating the mixture over medium heat
7. 奶油布丁餡會開始濃稠
The mixture will start getting thicker
8. 放涼備用
Let cook once done

車輪餅 Wheel Cake
1. 雞蛋打散
Beat the egg
2. 加入糖. 混合均勻
Add sugar and mix well
3. 加入牛奶
Add milk
4. 加入泡打粉, 玉米粉跟低筋麵粉混合
Add baking powder, corn flour and low gluten flour, mix well
5. 再加入融化奶油
Mix in the melted butter
6. 混合完成, 放置60分鐘
Once done, let stand for 60 minutes
7. 車輪餅機熱好. 在一邊倒入麵糊. 用棍子推邊緣
Heat up the wheel cake machine, put in batter on one side. Use the wood stick to roll the edges
8. 等到餅皮起泡. 到麵糊到另一邊. 也用棍子滾邊
Once the batter start bubbling, add batter to the other side. Also roll the edges
9. 先做奶油布丁餡. 把之前烤的餅蓋在餡料上方. 壓實
Add the creamer filing. Then cover with the 1st time made cakes. Push to form the cakes
10. 等待的時候, 繼續做餅, 滾邊
Whiling waiting for batter to cook, continue make the cakes
11. 第一次做的可以拿出. 製作另一個邊. 放紅豆餡料
Remove the finished cakes, continue making new ones with red bean filing
12. 重複一樣的動作把全部的車輪餅麵糊做完
Repeat and finish up all the batters
13. 做完就可以享用囉
