Chile Cornmeal Crusted Tofu Po' Boy:
1 recipe Chile Cornmeal Crusted Tofu (below)
1 recipe Creamy Coleslaw (   • Creamy Coleslaw Recipe | The Vegan Te...  )
Chipotle Mayo (1/4 cup vegan mayo; 1 canned chipotle plus some sauce)
sandwich pickles
2 (12 inch) French bread loaves, sliced in half and split open
Chile Cornmeal Crusted Tofu:
corn or vegetable oil for frying
1 lb extra firm tofu, drained/pressed
1 cup rice/soy milk
2 tbsp cornstarch
1 cup cornmeal
2 tbsp chile powder
1 tsp cumin
1/4 tsp cayenne powder
1 tbsp grated lime zest
1 1/2 tsp salt
