Direct New York Style Pizza

2g dried active yeast
450g water
25g sugar
360g bread flour
60g semolina
290g 00 flour
35g olive oil
15g salt

-Mix the dough until smooth and allow to rise for an hour and a half at room temperature.
-Fold the dough on all sides to give strength. Allow the dough to rise another hour and a half.
-Divide and shape the dough into three dough balls weighing 405 grams each.
-Allow to rest on the counter for 30 minutes before refrigerating for 24-48 hours.
-Before baking, remove the dough from the fridge for one hour.
-Bake in a home oven preheated to 500F for 5 minutes. Change the heat setting to a 500F broil. Broil for 3 minutes.
-The pizza should be golden brown and ready to enjoy.
