Today, I'm thrilled to share a mouthwatering recipe for the most delicious potato flatbreads that are sure to tantalize your taste buds. Begin by cutting 12.5 ounces of potatoes into cubes (360 grams) and cooking them in a pot with 20 fluid ounces of water (600 ml) for 15 minutes. In a bowl, mix 3.5 fl oz warm water (100 ml) and 3.5 fl oz warm milk (100 ml). Add 1 tbsp white sugar and 1 tsp active dry yeast, then wait for 5 minutes. Combine 10.5 ounces of all-purpose or bread flour (300 grams) and 1/2 tsp salt with the yeast mixture, and knead in 1 tbsp olive oil until the dough is smooth. Let the dough rest for 15 minutes. Drain the water from the potatoes and mix them with 2 tsp unsalted butter and salt to taste. After dividing both the dough and mashed potatoes into 8 parts, shape each dough piece into a ball and let it rest for 10-15 minutes. Grate 3 ounces of cheddar cheese (80 grams). Take a portion of mashed potato, shape it into a ball, create a divot, add shredded cheddar, wrap and repeat. Roll the dough flat, place a potato ball in the center, and wrap the dough around it.
