Who doesn't love curry chicken? This was the Mother’s day Sunday lunch I cooked—with some help from the husband and daughter. I ate out the prior two days and craved the comfort of home cooking, especially a curry! This #currychickenwithpigeonpeas and #dhalpuriroti was inspired by the delicious curry meals my mom made for us back in Trinidad —and still do. She is one of the best Trini cooks I know and makes the most amazing food. My goal in life has been to recreate the taste and flavor of her cooking and capture it for an eternity. I sent her some and she said the flavors reminded her of the good old days!
