Whether you're a seasoned baker or a beginner, these Slit Top Rolls are easy to master and a great way to elevate any meal. Let's get started!

Slit Top Rolls Recipe:

Ingredients:
Flour: 5 cups (about 550-650g)
Milk: 150 ml (about ⅔ cup, warm)
Water: 30 ml (about 2 tablespoons, warm)
Sugar: 2 teaspoons
Salt: 1½ teaspoons
Yeast: 1 teaspoon (instant yeast or 1¼ teaspoon active dry yeast)
Butter: 1 tablespoon (about 15g, softened)
Egg: 1 large (optional, for a richer dough)
Sesame seeds or poppy seeds: optional, for topping
Instructions:
Activate the yeast (if using active dry yeast): In a small bowl, mix the warm milk, water, sugar, and yeast. Let sit for 5-10 minutes until it becomes foamy. If using instant yeast, skip this step and mix the yeast directly into the flour.

Combine dry ingredients: In a large bowl, mix the flour, salt, and yeast (if using instant yeast). If you activated the yeast, pour it into the dry ingredients.

Make the dough: Add the milk mixture, softened butter, and egg (optional) to the flour mixture. Mix until a soft dough forms. If the dough feels too dry, add a bit more water, a teaspoon at a time. Knead for about 8-10 minutes until the dough is smooth and elastic.

First rise: Place the dough in a greased bowl, cover with plastic wrap or a clean towel, and let rise in a warm spot for 1-1.5 hours until it doubles in size.

Shape the rolls: Punch down the dough and divide it into 6-8 equal pieces, depending on how big you want your rolls. Each piece should weigh about 90-110g. Shape each piece into a round ball by rolling it under your palm on a lightly floured surface.

Slit the tops: Place the dough balls on a parchment-lined baking sheet. Use a sharp razor blade or knife to carefully make a small slit on top of each roll. This will give them their distinctive look!

Second rise: Cover the rolls again and let them rise for another 30-40 minutes until they are nice and puffy.

Preheat the oven: While the rolls are rising, preheat your oven to 190°C (375°F).

Bake the rolls: Optionally, brush the tops with a bit of milk or an egg wash (1 egg beaten with 1 tablespoon of water) for extra shine and sprinkle sesame or poppy seeds on top if desired. Bake the rolls for 15-18 minutes or until they are golden brown and sound hollow when tapped on the bottom.

Cool and serve: Once baked, transfer the rolls to a wire rack and let them cool completely before serving.

These rolls are perfect for sandwiches, burgers, or simply enjoying on their own with butter! I hope you enjoy making and eating these Slit Top Rolls as much as I do. Let me know in the comments how they turned out for you!
