Ingredients:

2 eggplants
50g olive oil
Salt, black pepper, and paprika to taste
Parmesan cheese powder
1 onion, diced
2 cloves of garlic, mashed
1 red pepper, diced
1 green pepper, diced
300g minced beef
1 tbsp Italian seasoning
200g tomato paste
75 ml water
100g mozzarella cheese, shredded
Fresh cilantro for garnish

Steps:

Cut the eggplants into 1 to 1.2 cm slices.
Brush the slices with olive oil and season with salt, black pepper, and paprika.
Sprinkle Parmesan cheese powder on top and bake at 360°F for 20-25 minutes.
In a pan, sauté the diced onion with olive oil until translucent.
Add the mashed garlic, red pepper, and green pepper. Cook until softened.
Add the minced beef and cook until browned. Season with salt, black pepper, and Italian seasoning.
Stir in the tomato paste and water. Cook for 15 minutes until the mixture thickens.
Layer the eggplant slices with the beef mixture and shredded mozzarella cheese.
Bake at 375°F for 15 minutes. Garnish with fresh cilantro and serve.
