Welcome to Episode 1 of ✨ Crazy About Corn 🌽✨ I am actually quite crazy about this series and corn!! With monsoons here, I can’t wait to share my favourite corn recipes with you that are made for the soul ☺️

Of course the first recipe had to be the classic and irresistible Cheese Corn Balls 🌽🧀 Here’s how you make them at home ☺️

Ingredients :
Boiled Potatoes - 3 nos
Roasted Corn - 1/2 Cup
Capsicum - 1/2 no
Garlic - 3 cloves
Green Chillies - 2 nos
Chilli flakes - 1 Tsp
Oregano - 1 Tsp
Salt & Pepper - Taste
Processed Cheese - 1/2 Cup
Mozzarella Cubes - 8-10 nos
Bread Crumbs - 3 Tbsps

For coating :
Bread Crumbs - 1/2 Cup
Flour/ Maida - 2 Tbsps
Cornflour - 2 Tbsps
Water - 6-7 Tbsps
Salt & Pepper - Taste
Kashmiri Chilli Pwd - 1/2 Tsp
Oil For Frying

Process :
Start by boiling & grating the potatoes
Add in the grilled corn kernels along with the finely diced capsicum, green chillies, grated garlic, oregano, chilli flakes, processed cheese, salt & pepper to taste along with the bread crumbs - mix to form a dough
Take out equal sized dough balls of the potato mixture, flatten it up and add a small cube of mozzarella cheese in the centre, enclose it with the mixture & form even sized balls
To make the slurry, mix together corn flour, flour, salt & pepper to taste, red chilly pwd along with some water to form a thin batter
Dip each dough ball in the batter & immediately coat with some bread crumbs - refrigerate the coated cheese corn balls for 20-30 mins before deep frying them
Deep fry the cheese corn balls in some hot oil until golden brown & crisp
Serve these cheesy, crispy Cheese Corn Balls alongside your favourite dip & Enjoy 🌽🧀
