DHAKA KARAHI RECIPE :

Ingredients :
Mutton 16 pieces 1 kg
Onion 2 coarsely cubed
Tomatoes 4 sliced
Green chilies 6
Oil ½ cup
Coriander leaves ¼ bunch
Salt 1 tsp heaped
Ginger sliced 2 tbsp
Allspice 1 tsp
Cumin roasted & crushed 1 tbsp
Coriander roasted & crushed 1 tbsp
Crushed red pepper 1 tbsp
Ginger garlic 1 tbsp

METHOD :
Heat oil, add ginger garlic paste, and mutton, and fry for 10 mins, add onion, tomato, salt, and ginger julienne, cover, and cook for 15 mins, open, add crushed seasonings, fry well, and add green chilies, and coriander, allspice, fry till oil comes on top, serve with nan.

TIKKA PULAO RECIPE :

Ingredients :
Chicken 4 pieces 1kg
Chili powder 3 tsp
Roasted & crushed cumin 2 tsp
Cumin roasted and crushed 2 tsp
Ginger garlic paste1 tbsp
Salt 1 ½ tsp
Lemon juice ¼ cup
Ketchup ½ cup
Orange color pinch
Chat masala 1 tsp
Oil ¼ cup

METHOD :
Marinate chicken with all the ingredients and leave it for 2 hours, cook in a pan covered until dry, and give dum of coal.

Ingredients for Pulao :
Rice soaked for 20 mins ½ kg
Oil ½ cup
Brown onion ½ cup
Black cumin ½ tsp
Mixed whole spices 1 tbsp
Green chilies ground 1 tbsp
Bay leaf 1
Ginger garlic 1 tbsp
Stock cube 1
Salt 1 ½ tsp

METHOD :
Heat oil, add brown onion with whole spices, ginger garlic, black cumin, grounded green chilies, bay leaf, stock, and water, add rice, cover and cook till done, add cooked chicken on top, leave it on dum for 10 mins, mix rice and serve with tikka pieces and raita.
