Oven :
Tart dough: Bake 175℃ = 347℉ / for about 23~25min
Almond cream: Bake 170℃ = 338℉ / for about 20~25min

Ingredient (Ø16.5cm tart tin *video / 20cm tart tin)
● Tart dough
room temperature butter 50 / 75 g
icing sugar 30 / 45 g
salt 3 / 5 pinch

room temperature egg 15 / 22 g

almond powder 20 / 30 g
cake flour 80 / 120 g
baking powder 0.5g(+1/8tsp) / 0.75g(+less than 1/4tsp)

● Almond cream
room temperature butter 40 / 60 g
icing sugar 40 / 60 g

room temperature egg 40 / 60 g

vanilla extract or dark rum 1/2tsp(about 3g) / about less than 1tsp

almond powder 40 / 60 g

● Diplomat cream
1) Custard cream
room temperature egg yolk 2 / 3ea
sugar 35 / 52 g
cake flour 8 / 12 g
cornstarch 4 / 6 g

milk 110 / 165 g
fresh cream 60 / 90 g
*You can use 60g / 90g of milk instead of fresh cream

butter 5 / 8 g
vanilla extract or dark rum 1tsp / 1.5tsp

2) fresh cream 120 / 180 g

● Nappage
1) If you use gelatin powder
gelatin powder 1g
cold water 5g

hot sugar water (sugar 4g + water 5g)

2) If you use gelatin sheet
gelatin sheet 3/4 sheet (1.5g)

Hot sugar water (sugar 4g + water 10g)

● Strawberry about 450g (1 pack)
