🍇 recipes:
rice noodle salad:
cooked rice noodles, cucumber, carrot, fresh parsley
1 tsp sesame seeds, 1/2 tsp chili powder, 1 tbsp vinegar, 1 tbsp soy sauce, salt, pepper, grated ginger, 2-3 tbsp oil (i used a mix of sesame and sunflower oil)
artichoke pasta:
olive oil, 1/2 onion, 1 clove of garlic, 1/2 jar of artichoke hearts, white wine to deglaze the pan, 2 tbsp nutritional yeast, 1/2 cup soy milk, pasta water as needed, black pepper, chickpeas, fresh parsley; pasta and cabbage; topped with black pepper and extra virgin olive oil
crispy potato salad:
potatoes and chickpeas, roasted with cumin, salt and olive oil
crispy lettuce, red onion, apple, chives, vegan feta
1/2 tsp miso paste, 1 small tsp dijon, 2 tbsp extra virgin olive oil, juice from 1 lemon, touch of maple syrup, salt & pepper to taste
