One of the more interesting cold weather mushrooms, these aren't technically oyster mushrooms. Known as Mukitake in Japan, they're also known as the late fall oyster mushroom or olive oysterling and appear after the first frosts of the year from Oct-Dec. It's one of the last mushrooms of the season and a fun one to get to know, but they have a more mild flavor than true oyster mushrooms like P. ostreatus.
