Veg Kurma is a popular south Indian recipe with lots of vegetables mixed with thick coconut and cashew based gravy. This dish is quite wholesome and can be served with hot rotis or puris on the side.

INGREDIENTS:
For Paste -
10-12 cashews soaked in water for 1 hr
2 tsp poppy seeds/khuskhus soaked in water for 1hr
1/4 cup grated fresh coconut
2tsp roasted chana dal
2 green chillies
2 green cardamom/hari elaichi
3-4 cloves/laung
1 piece cinnamon/dalchini
4-6 black peppercorns/kalimiri
1 tsp fennel seeds/sauf
1 tbsp coriander seeds/dhaniadana
1 tsp cumin seeds/jeera
2-2 dry red chillies

Curry-
3-4 tbsp oil
1 bay leaf/tajpatta
10-12 curry leaves
2 medium onion chopped fine
1 tbsp ginger garlic crushed/paste
2 tomatoes chopped
1/4 tsp turmeric powder
1/2 tsp red chilly powder
3 tsp fresh yogurt/dahi
Frest coriander
Salt to taste

Parboiled Vegetables -
10-12 Cauliflower florets
1 Potato cubed
1/2 cup Green peas
1-2 Carrots chopped
8-10 beans chopped
