Jamaican Bulla Cake
370g Plain Flour
180g molasses sugar
1.5 tsp Baking Powder
0.5 tsp Bicarbonate of Soda
2 tsp Ground Cinnamon
0.5 tsp Nutmeg
0.25 Allspice
0.25 Salt
65g Unsalted Butter
125g water
2 tsp Golden syrup
2 tsp Vanilla extract
3 tbsp melted butter
20g melted butter


In a large bowl add the flour, baking powder, bicarbonate of soda, salt, nutmeg, allspice and cinnamon and mix until combined.
In a separate large bowl add the molasses sugar, golden syrup, vanilla extract, water, and mix until combined.
Make a well in the centre of the flour mixture bowl and pour the wet mixture into the bowl. Using a wooden spoon mix the ingredients until it forms a sticky dough. Flour a work surface and pour out the dough, knead the dough until it forms a smooth dough ball, and add more flour if needed to make the dough less sticky.
Flour the surface again and then roll out the dough to around 0.5 inches thick. Use a small bowl or a large biscuit cutter, you should be able to make 6/7 cakes with the dough. Put the cakes onto a baking sheet lined with parchment and place into a preheated oven at 180 degrees for about 20 minutes. Remove from the oven brush with melted butter and allow to cool.
Serve with Cheese, or pear or just on its own, lick you’re lips and enjoy 😋😋
