Chicken Parmesan

10 – 12 Chicken Tenderloin Pieces
2 Eggs
2 Cups of Panko Bread Crumbs
1 Cup of Parmesan Cheese (I used Kraft in the green can)
1 Tbsp of Italian Seasoning
1 Jar of Classico Four Cheese Spaghetti Sauce
2 Cups of Shredded Mozzarella Cheese
Salt to Taste
2 Tbsp of Butter & 2 Tbsp of Olive Oil
2 Large Ziplock Bags

Slightly beat two eggs and a pinch of salt and place in Ziplock Bag. Add chicken tenderloins to egg mixture and coat completely.
In the other Ziplock bag, mix together bread crumbs, parmesan cheese, Italian seasoning and a good pinch of salt. Add chicken to the bread crumb mixture making sure that each peace is coated completely.
In a non-stick skillet heat olive oil and butter on medium heat. Once butter is melted and bubbly add chicken and turn heat to medium high. Sauté three minutes per side or until chicken is golden brown and thoroughly cooked through. Do not over cook.
Place chicken in baking dish and cover with spaghetti sauce and cheese.
Cook in preheated 350 degree oven until heated through and cheese is melted.
Garnish with Italian Seasoning and Fresh Basil

This dish is delicious served over Orzo Pasta
