完成的4種餡料,除了用來包麻糬,其實也可以當其他中式點心的內餡。像是甜的包子、麥仔煎、車輪餅或者小餐包、麵包捲也都可以變化成這些口味。其實最簡單的,紅豆餡跟芋頭餡直接抹吐司就很好吃了!喔還有更簡單的,花生跟芝麻直接往嘴裡送也是很涮嘴,因為自製的內餡甜度都可以調整,直接吃就超好吃的,一定要小心,一不注意就會吃太多喔。

花生粉 100 g

芝麻粉 100 g
砂糖 25 g
有鹽奶油 20 g

蜜紅豆 200 g

芋頭 300 g
糖 40 g
鮮奶油 30 g
有鹽奶油 10 g

In order to make a box of variety flavors of mochi(麻糬), I made 4 different sweet fillings, peanut, sesame ,azuki bean and taro. They can be filled in many Asia pastries like bao-zi(包子), wheel pancake(車輪餅)... etc. The key point is the texture. You want to make them into the right texture (not too wet, not too dry) so that you can wrap them or shape them easier. I will show you how to make them at home in the video recipe.

:Recipe:

Ingredients▼

○Peanut Filling

ground peanut, 100 g
peanut butter, 60 g

○Sesame Filling

ground sesame, 100 g
sugar, 25 g
salted butter, 20 g

○Azuki Bean Filling

sweetened azuki bean, 200 g
salt, 1/8 tsp

○Taro Filling

taro, 300 g
sugar, 40 g
heavy cream, 30 g
salted butter, 10 g


:Instruction:

●Peanut Filling
1. Add peanut butter into a mixing bowl with ground peanut.
2. Mix peanut butter and ground peanut with a fork.
3. If the texture is too friable, add more peanut butter.
4. Mix the mixture well.
5. The texture should be lumpy.

●Sesame Filling
6. Add ground sesame into a food processor.
7. Add sugar and butter.
8. Blend the mixture well in medium speed.
9. Shake the container and then continue to blend.
10. If the texture is too friable, add more butter.
11. Blend the mixture well in medium speed.
12. Shake the container and then continue to blend.
13. The texture should be lumpy.

●Azuki Bean Filling
14. Add sweetend azuki bean into a flatpan.
15. Spread out the sweetened azuki bean.
16. Add salt.
17. Saute in a medium-low heat.
18. Spread out so that it will be done fastly.
19. Crush some azuki bean when sauteing.
20. The texture should be mushy not super dry.

●Taro Filling
21. Cut taro into thin slice.
22. Add into a glass container.
23. Pour 2 cups of water into the Tatung cooker.
24. Place taro into the cooker and turn on the power.
25. Take out cooked taro.
26. Add sugar and butter when the taro is still hot.
27. Mash and mix with a fork.
28. Pour in heavy cream.
29. Mix until well combined.
