A Manhattan Variation from that time in NYC when Manhattan Variations were the cutting edge of the newly established cocktail “Renaissance”. These variations kicked off By Vincenzo Errico’s Red Hook and now comprise a complete category unto themselves. This one created by Audrey Saunders in 2005 for the opening menu at The Pegu club in NYC. Some have it that this was Ms. Saunders’ Ode to her mentor Dale DeGroff.
