I've always been fascinated by the idea that brewers were able to brew beer before they even knew that yeast existed...

Now we have so much information that brewers are scared to do things like harvesting yeast and re using it...

If you think about it, brewers back in the day didn't have a homebrew supply store where they could get a fresh vial of yeast...

They didn't even know yeast existed!!

Yet they were able to ferment successful batches time after time...
