Ingredients :-
🍪Salted Butter: 1/2 cup (115 grams), room temperature
🍪White Sugar: 1/2 cup (110 grams)
🍪Brown Sugar: 1/2 cup (110 grams)
🍪Water: 2 tablespoons (30 ml)
🍪Baking Powder: 1 teaspoon (4 grams)
🍪Oil: 1 teaspoon (5 ml)
🍪Vanilla Essence: 1 teaspoon (5 ml)
🍪Refined Flour (Maida): 1 + 1/3 cups (190 grams)
🍪Corn Flour: 1 tablespoon (8 grams)
🍪Baking Soda: 1/2 teaspoon (3 grams)
🍪Salt: 1/2 teaspoon (3 grams)
🍪Dark Chocolate- 3/4 cup (150grams)

In a large bowl, mix the room temperature salted butter with white sugar and brown sugar until light & airy.
In a separate glass, whisk together water, baking powder, oil & vanilla essence. This is our egg substitute. Add this mixture to the butter and sugar, along. Whisk until everything is well incorporated.
In a separate bowl, mix in refined flour, corn flour, baking soda, and salt. Mix well with a spatula until all ingredients are combined.
⁠Add dry ingredients in 2 batches to the batter. Use cut & fold method & gently bring everything together.
Roughly chop the dark chocolate and fold it into the dough.
⁠Cling wrap & refrigerate the dough for minimum of 30 minutes. This chilling step is crucial for developing flavor and preventing over-spreading during baking.
Portion the dough into 45-gram balls .
⁠Make tight round balls & slightly flatten it. Place them in a baking tray leaving 2-3 inches between each cookie & top them with more chocolate chips.
Preheat your oven to 175°C (350°F).
Bake for 10-12 minutes until the edges are golden brown.
Remove from the oven and ⁠let the cookies cool on the baking sheet for 8-10 minutes before moving them.
