This high protein, dairy free yogurt parfait makes for a great grab-and-go breakfast, post workout snack, or lunch. It takes 5 minutes to make, has no added sugars, is full of healthy fats, has good balance of carbohydrates, and as I said before, has 37.5 grams of protein to boot! Full recipe below.
 
INGREDIENTS:
½ cup Cocojune pure coconut yogurt, I used this brand, as it’s the cleanest dairy-free yogurt out there. A a lot of DF yogurts contain gums. If you can handle dairy, then use plain Greek Yogurt, as it has way more protein. 
 
1 scoop unflavored protein collagen powder, or your favorite collagen powder - Fun fact: Pairing collagen with hemp seeds turns the collagen into a complete protein. 
 
3 tablespoon hemp seeds, also called hemp hearts. Hemp seeds are a complete protein, meaning they have all the amino acids our body need, and 3 tablespoons gives you 9-10 grams of protein.
 
¼ cup sprouted buckwheat – I used Lil Bucks Sprouted Buckwheat. It's organic, uses regenerative soil, has 6 grams protein, 5 grams of fiber and the right amount of crunch. It's also ready to go, no soaking or cooking needed. 
 
 1/2 cup fresh blackberries, or berries of choice - you can also use frozen berries, just thaw them out a bit before adding if you're going to eat the parfait right away. I thaw out my berries in a small colander set over a small glass bowl to catch any juices. 
 
2 tablespoon raw or sprouted pumpkin seeds - you can find these in the bulk bin at your grocery store
 
1 tablespoon bee pollen - I use local bee pollen to help with allergies
 
DIRECTIONS:
Add 1/2 cup yogurt and bone broth collagen to a small bowl and mix together well using a small spatula. You can also just mix the yogurt and collagen together in the glass jar you're going to use, but I like my parfaits to look pretty, so I mix them in a separate bowl first. Using a spatula, scrape the yogurt mixture into the glass jar you're going to use.
 
Next, you're going to layer the other ingredients over the yogurt. Top the yogurt with the hemp seeds, buckwheat, berries, pumpkin seeds and bee pollen. 
 
Put the lid on, and store it in the refrigerator till morning, or feel free to eat the parfait now. It's up to you.
