Today, I made marshmallows.

Ingredients:
3 envelopes Knox gelatin
1/2 cup cold water
2 cups sugar
2/3 cup corn syrup
1/4 cup water
1/4 tsp salt
1 tbsp vanilla extract
Powdered sugar
Cooking oil

Directions:
Line baking dish with parchment paper and set to side.
Pour cold water and gelatin in stand mixer and let sit for 10 minutes.
In a small saucepan, combine sugar, corn syrup, and 1/4 cup water over medium heat and bring to a boil.
Let boil for one minute, then pout into stand mixer.
Add salt.
Using whisk attachment, beat on high for 12 minutes.
Put on low speed and add in vanilla extract until just incorporated.
Lightly oil parchment paper.
Using oiled spatula, pour mixture onto paper.
Cover with other oiled parchment paper.
Flatten evenly.
Let sit at least 2 hours.
Remove top parchment paper.
Sprinkle powdered sugar on top.
Cut into desired size.
Dredge in more powdered sugar.
Serve and enjoy!
