Ingredients 食材 ( 6 servings | 6碗)

- 600g of fresh clams (with shells) 蜆/蛤蜊
- 4 cups of water 清水
- a dash of white pepper powder 白胡椒粉
- ¼ cup of white wine 白葡萄酒

- 1 tbsp of olive oil 橄欖油
- 2 tbsp of unsalted butter 無鹽牛油
- 8 strips of smoked bacon 煙肉
- 1 onion 洋蔥
- 1 stalk of celery 西芹
- 2 cloves of garlic 蒜頭
- 500g of waxy potatoes 低澱粉薯仔
- 1 cup of chopped flat-leaf parsley 扁葉歐芹
- a small bunch of fresh thyme 新鮮百里香
- 3 bay leaves 月桂葉
- 3 heap tbsp of plain flour 麵粉
- 1 cup of full-fat milk 全脂牛奶
- 1 cup of organic chicken broth 有機清雞湯
- 3/4 cup of water 清水
- 2 cups of clam soup 煮蜆水
- 200ml of cooking cream or 150ml of single cream 煮食忌廉/低脂忌廉
- salt and ground black pepper 鹽和黑胡椒粉適量
