Unagi is no exception, and this Vegan Unagi Don (うなぎもどき丼) glazed in savory-sweet unagi sauce is an easy fix that will satisfy vegans, vegetarians, and seafood lovers alike. I also include a recipe for high-protein tofu and sesame rice that pairs beautifully with this glazed eggplant.
